Let us know how the BBQ is. Maple Tree does catering and they have a deli in Riverhead. I know that they have some smokers and it would be nice to see if their 'Q is any good.

Remember, if they have an "authentic Texas" category, load it up with beans, corn, and chicken like any true Texan.
They love their beans and veggies.
And remember, Frito Pie was invented in Illinois
I have to respond to Willkat98.
"Authentic Texas Chili" does not contain beans at all. Pinto beans (made from strach) are served on the side, if you want to mix them, that's up to you.
They do the sauce and the meat in a true style chili. No beans added.
Now me...I like beans in my chili.
My recipe will work with or without beans. I did this because some compititions will not allow beans.
But adding beans is a Southern thing. Chili done this way was meant to be filling. Many things are added to make it filling for workers (years ago) that worked hard all day.
