BBQ Recipes: Big Bob Gibson's White Barbecue Sauce
Here it is, Big Bob Gibson's recipe for his infamous White Barbeque Sauce. This recipe has been published for years on the internet, but I trust that this one is the real thing. This is the version as published by Mike Mills in the fantastic book, Peace, Love and Barbeque. Enjoy.
Big Bob Gibson's Hickory-Smoked Chicken
- 1 cup mayonnaise
- 1 cup apple cider vinegar
- 1 tablespoon lemon juice
- 1 1/2 tablespoons cracked black pepper
- 1/2 teaspoon kosher salt, finely ground
- 1/4 teaspoon cayenne
- 1 whole chicken, cut in half
- Finely ground kosher salt and ground black pepper
- 1/2 cup vegetable oil
To prepare the chicken: Wash the chicken and season it liberally with salt and pepper. Smoke over hot coals and hickory wood at 300 to 350 degrees for 3 to 4 hours or until the internal temperature reaches 170 degrees. Halfway through the smoking process, baste the chicken with oil and sprinkle with salt and pepper once more.
After you take the chicken off the pit, immediately place it in the bowl of white sauce, turning the chicken to coat evenly. Place the chicken on a cake rack and allow it to rest for a few minutes prior to serving. Discard any sauce that you've used for coating chicken.

I just wanted to say to any one who might be skeptical about a white BBQ sauce - This sauce rocks. I've been using it since I bought Mike Mills book and it has become a staple of my party food arsenal. It's easy and it tastes fantastic.
Unlike Bob Gibson, I generally opt to pull the chicken and then put it in the sauce. I find that this really intensifies the flavor. Plus, it's easy to bring to a party.
Try it. You'll like it.

I live in New York, but spent last weekend driving around Northern Alabama eating Alabama white sauce. I ate at Big Bob's, and the sauce was the best thing on the table. Tangy, thin and fresh it was delicious over all meats, not just chicken. Here's a link to my Flickr photos of my meal (and Big Bob's smokers). Other places in Alabama that serve the sauce are Greenbrier's in Madison (very thick, more like mayonnaise) and Miss Myra's in Birminham (in between Big Bob's and Greenbrier's in thickness, but very tangy). Good stuff.
Paula Deen's "official" version, Dr BBQ's Alabama White Sauce, and several others have horseradish in the recipe.
I was wanting to try some white BBQ sauce for the first time tonight. I had two recipes from Southern Living (Oct 2007 and Aug 2005) but they just didn't float my boat, so I googled some form of "gibson's white bbq sauce" and guess who comes up? Your blog that I already read!
It rocked. My wife and I loved it, but the boys did too! We used the sauce with boneless thighs on the BGE. Damn tasty.
Man, this post seems to be real popular lately. Suddenly, it's the most requested page on my blog. It got to the point, where I had to make this for dinner tonight. Damn good stuff, but I screwed up and put in 1/2 tablespoon of kosher salt. It didn't seem to matter. It was still gooooooooooooooooooooooooood.
Another place that serves very good Alabama White BBQ Sauce (And phenomenal Sweet Potato Fries!) is Buttahatchee BBQ in Hamilton, AL, north of US78 Exit 14.
Having lived in Chicago for most of my life, it was definitely a shock to discover this very regional sauce to enhance my smoked BBQ chicken eating experience.
this is the wrong ingredients for this sauce. this one makes a half gallon. 32oz.mayo 16oz.white vinegar 8oz.apple juice 1 1/2tblsp lemon juice 1 1/2tblspprepared horseradish 1tblspblack pepper 1 tsp red pepper mix with hand blender refrigerate and enjoy!
This recipe might taste great, but it is not Big Bob Gibson's sauce. The restaurant has been on numerous food network shows and they always have prepared horseradish in it.

On a recent trip to Huntsville Alabama I took a quite large group out to the OLD Greenbriar (the one across from the cotten gin). After eating I started talking to one of the owners about the white sauce. He said they don't use Mayo, but instead use Miracle Whip. He said the recipe was simple...equal parts Miracle Whip and vinegar and then add in black pepper to taste. He said to add more vinegar if you want it thin, and more Miracle Whip to make it thicker.
