  • Open Pit Original Barbecue Sauce
Now I love this magazine, but I have to argue with their choices. They sampled BBQ sauce as a dipping sauce put on meat after it's cooked. Me, my sauce is glazed on the meat during it's final cooking time. It takes on a whole new character that way. I don't know too many Barbecue cooks who use sauce that don't cook it that way.

Yes, The Test Kitchen is good, but I think those folks need to get outside once in a while. I'm wondering if they actually barbequed their test meat outdoors.

Those folks probably don't have a clue. They only chose national sauces and probably don't have any idea what goes in to making bbq.

Did you invite them to the bash to learn something?

I can tell that they stuck w/ easy to find products, but you're right-- there're no low-sugar finishing sauces on that list.

Do you have a favorite among these mainstream products? I've doctored the Sweet Baby Ray's with some decent luck....

Umm - People, I know I'm chiming in a little late - but in Texas we don't mess the meats up with the bbq sauce during the cooking process.
The sauce comes after and you drizzle it on your brisket before you put the fat white bread hat on your sandwich. Come visit sometime.
