Which BBQ contest has Lou actually won???? That he did on his own??? please name one.
As far as I know, Lou hasn't competed with his own team, but he was part of Adam Perry Lang's team for years and Adam's been very successful.
I don't know what role Lou exactly had on the team, he could have been the chief dishwasher for all I know, but whatever he did, he contributed to that team's success. No one wins alone.
In my humble opinion, winning at competition BBQ is not the only definition of a pit master. As far as I know some of the legendary pit masters like Arthur Bryant never competed and no one would challenge his credentials.
Some may argue that it's a bit premature to call Lou a pit master, but he's taken on that role with the new restaurant. I wish Lou much success.
Just to echo WhiteTrash's comments above, Lou has cooked with some of the best competition cooks in the country-- Adam Perry Lang of Daisy May's BBQ and Robbie Richter of Hill Country NY (and the Big Island Barbeque team) at contests where they took home trophies and ribbons. Not being the head cook on those teams doesn't mean his contributions didn't count towards the outcome.
He then spent time running the pits at Hill Country with Robbie Richter where, obviously, he picked up a thing or two. He has never claimed to be the head cook on a competition team, but he's certainly been part of them, and has judged at a fair number of contests, as well.
